The flat iron steak is carved from the chuck, or shoulder, of the animal, and is second in tenderness only to the filet. Eat it as a stand-alone steak or slice it for beef fajitas or stir-fry.

Flat irons may be cut a number of ways, and each steak may vary a bit in size, thickness, and appearance, depending upon how the locker sliced it, but it's sure to please even the pickiest of eaters!
